Aïoli (Garlic mayonnaise)

• 25 centiliters of olive oil
• 5 cloves of garlic
• 2 egg yolks
• Salt and pepper






Peel and remove the germ from the cloves of garlic.
Crush them in a mortar.
Add the two egg yolks to this paste.
Pour the olive oil little by little while mixing the ingredients.
Add salt and pepper and a squirt of lemon juice.
